What is King's Fat?
Tallow is rendered beef fat, sometimes called lard. Like many other saturated fats, it is solid at room temperature but becomes liquid when heated. For centuries, tallow (or beef fat) was considered a healthy and delicious fat for frying, cooking and other purposes. It was only when cheap, highly processed vegetable oils came along that tallow and other animal fats disappeared from the kitchen. The King's Fat Team makes tallow from the fat of cattle raised and fed in Switzerland. The cows in Switzerland are fed mainly grass and hay and have no trace of antibiotics or growth hormones.
